Course Description:  3-0-360.  Field work consisting of 360 clock hours in an approved foodservice operation under supervision of chef and/or manager. 

Course Objectives: 

Upon completion of this course the student should turn in the following:

    1. Proof of 360 clock hours (see externship packet) – completion of contracted schedule with

employer.

    1. Submission of the Externship Log minimum 3 entries/week for 9 weeks.
    2. Submission of Externship Report by the 4th day of regularly scheduled class following the semester in which the externship occurs.
    3. A favorable evaluation from the externship site chef/manager or their designated representative (see externship packet).
    4. Completion of Externship Training Log (see externship packet).

 

Required Texts and Manuals: 

Resume (Required 4 months prior to start of externship to begin location process)

Externship Packet and Externship Training Log (to be purchased from the bookstore)

Proof of health insurance

Externship address sheet file with CJFCI office. 

Grading: 

Your grade will be based on the following:

Proof of 360 clock hours-xerox of paystubs

Submission of the Externship Log

Submission of the Externship Report (typed)

Evaluation from the externship site

Completion of Externship Training Log 

  • Uniforms:  The student is expected to attend work in complete ready uniform as described on the Uniform Designation sheet.

 

  • Grade Appeals:  To appeal a grade problem, send a written note (or e-mail) to my office within one week of the problem.  You must provide documentation verifying your claim.  Do not waste time with frivolous claims.

 

  • Incompletes:  An “I” (incomplete) will be given until all required externship information is submitted.  (proof of clock hours, externship log, externship report, evaluation, and externship training log).
